Getting started with DMS

DMS is a kiosk mounted outside the walk-in door. It tracks every stack of dough from delivery to use or discard, tells the team what to proof and when, and alarms when proofing dough is ready or must be thrown out.

  1. Delivery arrives. Tap Receive delivery, confirm the counts by size against the order, and the stacks appear in the walk-in view.
  2. Pull to proof. DMS suggests what to pull based on your sales pattern and how much is already out. Tap the stack and mark it out.
  3. Ready alarm. When a proofing stack is ready, the kiosk sounds an alarm and shows which one.
  4. Discard alarm. When a stack passes its limit, the kiosk sounds a different alarm until it is marked discarded.
  • Every stack by size, with its delivery date and dough day.
  • Where each stack is: walk-in, proofing, or used.
  • Cumulative time out of the walk-in, so a stack that came out twice is counted correctly.
  • Delivery counts against your order, so shortages are caught at the door.
